The Easiest Vegan Meal Ever!

I am a new vegan! And by new I mean… like every now and then… I might have an In-N-Out Burger LOL! But 99% of the time, I am strictly plant-based. Below is my kid friendly, super easy, favorite vegan meal EVER! We love Mexican food, so here is our version of a Vegan Pollo Bowl.

Ingredients:

  • 2 cups uncooked rice
  • 3 yams/sweet potatoes
  • 1 red onion
  • 1 bell pepper
  • 2 avocados
  • 1 cup red cabbage
  • 1 Bag vegan chips

I start with 2 cups of rice and pour in about ½ cup of salsa with the water to give the rice a bit of a kick.

Then, I saute red onions and bell peppers. Peel and chop two sweet potatoes. Sprinkle the sweet potatoes with taco seasoning, drizzle with EVOO and bake until fork tender at 350 degrees.

While the potatoes are baking I slice 2 avocados, 1 cup of red cabbage, and crumble a few vegan chips with my hands. (Today I had vegan salad toppers, but normally I just use vegan salsa chips.)

After the potatoes are fork tender I layer the rice, sweet potatoes, red cabbage, salsa, avocados and crushed chips all up in a big mound, and sprinkle on some vegan Ranch and presto! The easiest most delicious vegan meal you ever ate.
